Would it be even possable and cost effective to swap an LS1 engine and a corvette drivetrain into a 1999 grand am se w/ the 3.4? I know i would have to do some major fabbing w/ the rear wheel drive but wouldn't this be insane?

The engine, maybe .... the tranny, no. On the LS1 Corvette, the actual tranny is located between the rear wheels and thus is too much work. You will find yourself with a far better shot at success if you use a Camaro/Bird LS1 and tranny.

if you can see, the transaxle would sit between the seats and would probably only be long enough for a 2 door

the most feasible way of having a V8 GA is going the 350/muncie (or turbo 350-400)/full length driveshaft/12 bolt rear end route
