what parts would i need to buy to be able to hook up a video monitor to an x-box?

monitor, rca's, xbox, power inverter for the xbox

if your running more than one monitor maybe some kinda a/v module that allows you to send the signal to multiple monitors without signal degration

.....AKA: Video Amplifier, but You should be fine with up to 2 monitors off 1 source.

Also depending on the headunit you will be using, you may possibly need an FM modulator (if your headunit dosen't have an Auxilary input)

do the monitors have speakers? cuz there would be some point where i would like to watch a movie/ play games and at the same time listen to music.

Typically monitors play sound through the vehicles stereo system, and can also play through wireless headphones.

With the headphones, one can listen to whats on the screen, while the other passengers can listen to the music

or like my headunit has aux inputs, but you have to be on that source to hear it. so you can watch tv and still listen to regular music. even if you go with an FM modulator you'd still have to switch over to the specific fm frequency before you could hear what was happening. :)

some indash dvd players have internal amp and preouts, so i guess you could run the preouts to the auxin on your head unit and run the internal amp so some smaller speakers for the ppl playing games, it may not sound great, but it's a way you can do it
