Will they fit? Probably.
Should you do it? NO!
You'd end up with a tire whose circumference is 7% larger than before and that will badly affect your speedometer, odometer, brakes and transmission. You'll also end up with a tire that is "softer" (due to the higher sidewall) which might affect your suspension. You should only replace tires with the same size or a size that's equivalent.
See http://www.miata.net/garage/tirecalc.html for a comparison.

You could go with a 205/55/16 ( narrower but same diameter as stock ) , but a 225/60/16 is too tall and will likely rub on turns and effect your speedo and final drive ratio too much .

Dont do it. I was running 215/55/16's and I know they are just slightly taller than 225/50/16, and when I had to install snow cables, there was barley enough clearance between the spring seat of the strut and the tire. Thats why they say not to use snow chains in the owners manual. Although it sounds tempting because of the sale, you might be sorry if you do it. The 225/60/16's are 1.7 inches taller in diameter than stock, and the difference in circumference when the speedometer reads 60mph or 100kph, your actual speed is 64.3mph or 107.1kph. And going by my experience with the 215/55's, they most likely will not fit.
