There is nothing that says that a five speed from a 3.1 MPFI V6 would fit, but there is NO model of GM anywhere that had a manual installed from the factory on a 3100 SFI V6. The engines are significantly different, although the bellhousing bolt patterns are the same.
There would be several problems - you'll need a custom transmission mount, as the auto mount won't be the same as the one for the 5 speed. The ECU will have to be custom programmed to get the engine to run without the 4T60E attached to it, as the tranny controls such things as the engine's idle speed.
Another likely problem is the prop shaft coming off the crank - there are usually diameter differences between ones for manual and automatic transmissions. So the old five speed may not mesh perfectly with the new engine, requiring specialized machining and tooling.
Nobody ever said it can't be done - but it wouldn't be cheap, or easy. It definitely isn't going to be a "plug-and-play" install.
