I don't have enough to get a in dash dvd player and tv so I'm gonna buy a monitor and dvd player separate. I found this on ebay...

How would I set that up? I don't want to put the dvd player in the glovebox or under the seat. Is it possible to put it under the a/c controls?

well if you want the screen under the ac controls.. sure you can or the dvd player but just have to be handy with fiber glass.. either way you look at it .. it will require customizing.. if your not handy and want to look good .. have to leave it to the professionals

I kinda thought that I could cut out the bottom dash plastic part

Neither link works because eBay won't let you link to auctions like that anymore. You have to post the item number instead.
Also just from the sounds of it (the Pyle brand name) I would seriously consider saving your money for something better--it will be more expensive but definitely worth it in the end. I'm willing to bet the Pyle is pretty cheap, right? There is a reason for that. Before you spend your money and find out you've wasted it, you should do some research on the products you're buying.
If you really just want a cheap solution, go ahead and buy the Pyle gear but just be ready for the possibility that it isn't going to be all that good.
Now as for the pocket under the dash, yes it can be cut out. You have to do some measuring, fitting, cutting and perhaps more trial-and-error cutting and fitting for what you want to fit in there but it isn't hard. Just use a dremel tool and cutoff wheels and it is pretty easy to cut through the plastic. Don't try a knife or saw though, I wouldn't recommend it--it will be really difficult to do and the cut won't be very nice.
I've cut my lower dash pocket out there and that is where I have my single-DIN in-dash MD changer. I've seen people put other stuff there, usually their HU when they mount a screen up top in the normal HU opening. If you're planning on putting a flip-out screen there though, it will be tricky. One you won't be able to flip it out unless the shifter is in gear and two it will be at a pretty low angle, which won't look good.
