I am sorry if this topic has been covered already, I did search and did not find my answer.
I have a 2001 Grand Am SEII with 225/50 16 tires. I want to put winter tires on the stock rims. Is there any other size that will fit.
eg: 205/50 16, 225/45 16. I was looking for used winter tires to use for a couple of months, but there seems to be every size available except for the size I need.
If I decided to put on 15 inch steel rims for the winter, what is the 15 inch equivelant tire to get the same diameter, I believe my tires are a 24.9 OD.

205 and 225 should fit fine, but they'll be a little smaller diameter. Stock 15 inch rims have a 215/60 tire size.

If I were you I would go with the steelies and get some snow tires for them. The tires are cheaper if you go with the 15 inch rim. That is what I did; I ended up buying 195/65/15. They were a lot cheaper than getting a 16 inch snow tire.

225/50/16" or 205/55/16"
215/60/15" or 205/60/15" or 195/65/15"

Non winter tire question....is 225 the widest you can go without rubbing or exceeding the rim width?

nope, 235/45R17's dont rub, but are damn close on a lowered GA. As for tires, I would recommend getting stealies and running a 205/60R15 or 215/60R15's. I run my 205's for the winter because, well in ice and snow, you want skinnier tires. I would NOT however, recommoned going anything smaller than a 205. A 195/65 adds height to the tire which is a bad thing to do with winter tires. They are already very soft and the sidewall will flex considerably, increasing the ratio will only add to this problem

Those are for 17's?
What's the widest you can fit on the stock 16" rim without going to wide for the rim or rubbing?

16/17, mine are 17's but a 235 on a 16" would be fine as long as the ratio is 45. Hell my tires are even extra wide because they have a lip to make the entire tire 235 and not just the fattest part of it
