Well, I got a new job for this summer, making considerably more money, and I've decided to upgrade my system again. I want to go with a flip-out DVD LCD head-unit, and I'm also looking to have around 1500wRMS+ for my subs. Planning on running two 15's, or two 12's, not sure yet. Here's some of the parts I've been looking at, any info/input would be nice.

I'm a little concerned with lights dimming and that sort of thing, I would be running that amp^^, along with a smaller 6-800watt amp for my other speakers, and I dont want to have problems with power.. Capacitor? 2nd battery? whats the best way.. Or do you think I'll need to do anything. I have a newly rebuilt alternator already(stock output for 98 GT), and a high output Interstate Battery.. Thanks.

yea most def a HO altinator and a yellow top batt under the hood and a secont yellow top for the system cant beat that with a bat :)

I've personally never heard of MA Audio (I've heard of Memphis Audio, which rule) but not this company. I'm going to recommend that you only get subs and speakers that you actually hear first... I know alot of people that order brands that I've never heard of before without listening to how they sound first, then getting them, hooking everything up, and it sounding horrible...
And, why do you want 600-800 TOTAL watts going to your speakers?? The MAX you would need is 400, and that's giving each speaker 100, which is still a hell of a lot. I have Polk db 6.5" speakers up front and 6x9" speakers in the back, running off a MTX Blue Thunder amp that's putting out like 280 total, or 70x4. That does the job very well. I'd look for a lower wattage amp, unless you like blowing your speakers...
Anyway, my recommendation stands that you listen to the brand of sub you want to buy before you purchase it online. Alpine makes Type R subs that you can listen to at Best Buy now, and those in 15" size SLAM! As long as you build your own box, or have one built to the exact specifications of the sub, you'll really pound. Also look at RE, Boston, JL (2 W3V2's would also slam really hard), well... anything other than a no-name company. I hope this post helps you a little bit.

Well, where do we start, lol? I haven't been around for a long time, so I'll restate my position here after 12+ years in the industry - buying audio gear online is not the best option available.
Those amps are OK, the subs don't suck, the deck is pretty cool.
You should definately upgrade the electrical system. Beef up the alternator, and if your Interstate is one of their gold series you'll likely be OK. If you want to upgrade/add another battery, I would go with one of the Hawker made units (Stinger, Odessey, EFX, etc) over the Optimas. They cost more, but the difference in output and longevity is dramatic. For those that don't know, Optima was bought out a while back, and their quality - while still better than many - has dropped a LOT since the days that earned them their reputation. Upgrade al the underhood wiring, especially the ground straps, to 0 awg with good quality rings. HUGE help there, regardless of what else you do.
