My wife's 04 SE 3400 has ~75,000 miles on it. Should I be worrying about the LIM gaskets yet or anything else? I've noticed it has sipped a little coolant in the last 3 months.

Meh, the LIM failure seems to happen at any time really. Best you can do is just keep an eye on it. Have you tracked down where the leaks been coming from over the three months?

No visible leaks that I've found.

The LIM can go at any time. My 04GTs LIM was leaking at 14000 miles and had it changed under warranty. If you are loosing a little coolant now you should have it checked as soon as possible. If you get coolant in your oil you could ruin the engine before to long.

If you can't see any external leaks then it could either be leaking into the oil or being sucked into the intake and burned. As mentioned, it can lead to much more expensive failures so it's wise to fix it sooner than later.
