Can you post a picture of the thermo you pulled out..or whats left of it that is, just so i can see what your talking about i honestly have never seen a thermo break apart and if it did i would think it would be clogging something and causing the motor to run hot and it's not which is strange.

Also when you say the heat doesn't work do you mean it's totally cool when you turn the heat on, or is it slightly warm..?

Im still lost on the fact that you got the car back from a mechanic and a month later the low coolant light came on..which meant it was low and is confirmed by you having to add some...now the question is: Where did the coolant go...??? Maybe the heater core is leaking and you just haven't found that out yet...would explain missing coolant and no heat..and after just about 15 years it is highly possible that this is the problem i would just hate to see you rip that out and go through all the work to find out it wasn't your problem, but unfortunately it seems as if its the only thing to do.

BUT.... i like where labant is going with this--here's a shot in the dark. Lets say that thermo did break apart which you say it did, it's located under the water pump housing correct..? Is there a steel pipe that runs from the water pump housing and then connects to the heater core inlet hose..? This is the way it's setup on my 2.4 and i have no clue if it's the same on yours which is why i ask. But if it is then MAYBE the broken part(s) of the thermostat went into this steel pipe and are clogging the opening for the hot coolant to pass into the heater core. Just a thought, i may be wrong but it just happened to be something that came to mind and can easily be checked by pulling off the heater core inlet hose and seeing if its clear along with the port on the firewall it connects to.
